Glacier Bilboquet: A Profusion of Frozen Delights is a case study by Edmilson De Oliveira Lima and Louis Jacques Filion.

Le Glacier Bilboquet Inc. is a small business whose main products are ice cream and sherbet. It operates out of two locations: on Bernard Street in Outremont (retail outlet) and on Beaumont Street in Montreal (factory and wholesale). Le Bilboquet’s products are extremely popular in Quebec, particularly its ice cream and sherbet as well as the frozen Christmas logs. Since its inception, this small business has stood out thanks to its innovations.

This case study uses passages from the life of Le Bilboquet’s two owners, Carole Lavallée and Yves Lebuis, to tell the story of the business since its start-up in 1983 until 2001. The end of the case finds the managing couple at a crossroad, faced with the challenge of making strategic choices for their business’s future as well for their own future.
